A variant on the classic Irish coffee, in which Baileys Irish Cream is substituted in place of Irish whiskey.
It consists of hot coffee, Baileys Irish Cream and sugar, with double cream, whipped until it begins to stiffen, floated on top.
[edit] Preparation
Black coffee should be prepared in the usual manner; A measure of Baileys Irish Cream should be stirred into the coffee. Sugar can be to taste, however Baileys itself it quite sweet. The cream should then be dropped on top of the coffee forming a 'head'. It helps to pour the cream slowly over a spoon that has been heated in a mug of boiling water.
