Prolamin

Prolamins are a group of globulin proteins found in grasses, most prominently the cereal crops such as wheat (gliadin), barley (secalin), rye (hordein) and oats (avenin). The are characterised by a high glutamine and proline content and are generally soluble only in strong alcohol solutions. Some prolamins, notably gliadin, may induce coeliac disease in genetically predisposed individuals.[1]
