Afuega'l pitu

Afuega'l pitu is an unpasteurised cow's milk cheese from Asturias. It is one of the oldest Spanish cheeses. Production is centred around the municipalities of Riosa, Morcín, Grado, Las Regueras, Pravia, Yernes y Tameza and Salas. The cheese is white (blanco) unless paprika (pimentón) was rubbed into its rind when aging, in which case it becomes red (rojo).
