Ghormeh Sabzi

Ghormeh Sabzi is an Iranian stew. It is an important element of Persian cuisine, often said to be the Iranian "national dish". The main ingredients are a mixture of sauteed herbs, including leek, parsley, spinach, cilantro, and fenugreek. This mixture is cooked with kidney beans, green onions, chives, dried limes, and lamb or beef meat. It is then served with Basmati rice.
Fenugreek gives the dish its characteristic curry-like flavor.
Ghormeh (and gheimeh) may refer to diced meat. Sabzi means vegetable. Ghormeh may also be an adaptation of the French gourmet, a vestige of the time when France had significant influence in Persia.
