Lentil soup

Lentil soup is a vegetarian soup made with lentils, and is the most common type of soup in much of the Middle East.
Elsewhere, it may be made using ham stock.
The lentils are boiled with vegetables such as carrots, potatoes, zucchini and onion. Then the whole mixture is pureed in a blender. Fried minced garlic and cumin are important additions to bring out the flavour of this soup. It is served hot, usually with a squirt of lemon juice and croutons. It is a favourite dish in Egypt.
