This article makes me hungry! It could be mentioned that Peking Duck served in large overseas Chinese communities (like Toronto, Vancouver, San Francisco, etc.) probably serve an authentic style dish, cuz they recruited a lot of top chefs from China, HK, etc. --Madchester 01:07, 31 Jan 2005 (UTC)
I'll confirm that myself and my dining companions were (and are) white Americans; we went to a restaurant which advertised Peking Duck in English. So, it wouldn't surprise me to learn that it was more western style. It was, however, yummy. Novalis 17:26, 14 Mar 2005 (UTC)
Unfrotunately it is difficult to know how authentic the Peking Duck is. most restaurant, even in places where it serve a large Chinese community (such as Vancouver B.C.), it may oriented more toward Hong Kong Chinese, and thus have different serving methods (as mentioned in the article, the three course peking duck is common in Vancouver B.C.)
But no doubt that this is a delicious meal.
"In the US, the health-conscious Americans..." ... I think this is factually incorrect.
