Black bean paste

Black bean paste, commonly called "dòu shā" (Chinese: 豆沙), is often used as a filling in cakes such as mooncakes or doushabao in many Chinese and Taiwanese cuisines.
Black bean paste is made from a green bean known as the mung bean combined with jujube powder, a predominantly red powder, but with hints of yellow.
Black bean paste is different from the more well-known red bean paste. The recorded history of black bean paste goes as far back as the Ming dynasty.
