Chilorio

Chilorio is a pork dish made popular in the Mexican State of Sinaloa. There are many different methods and recipes, but chilorio is generally tender pork that is fried in a chile sauce. It is similar to another Mexican pork dish carnitas. For chilorio the pork is slow-simmered for hours until the pork is falling apart. Then the pork is broken up into bite size pieces and fried in lard and then cooked in a chile sauce made from re-hydrated dried chiles. Or the lard can be added to the simmering pork and when the liquid is cooked off, the meat is fried in the lard then the chile sauce is added. The sauce usually has onions, cumin and garlic added to it for more flavor.
