Count It is a catch phrase popularized by the television show, Family Guy. The phrase is most often accompanied by the person extending their right hand straight up and cocking the wrist down. This action was popularized by NBA players who would do the motion after a successful jump shot.

The origins of the phrase are often attributed to sports telecaster Marv Albert, who's famous line "YES! and it counts", was popularized during his Basketball telecasts for NBC.

This phrase has continued to grow in popularity due to its use as emphasis to drive a point of conversation home. When a person makes a statement (usually in a back-and-forth exchange), but it is quickly retorted by a point that contradicts or disproves the original, those around (or the counterpoint originator themself) solidify the counterpoint with an exclamatory "Count It!"
For example, when introduced in Family Guy:
Psychiatrist - "I've been watching you and I don't think you're an addict, I think you're an idiot." Peter - "Well I don't pay you to think, hot lips, in fact, I don't pay you at all. Count it!"
