Filipino condiments

A number of condiments are used in Filipino cuisine. They include:
- Achara - a sweet pickled papaya relish.
- Sawsawang mangga - green mango relish with tomatoes and onions.
- Bagoong - fermented anchovy or shrimp paste
- Sweet sour sauce - used on fried meats and spring rolls.
- Liver sauce - used in roasts.
- Eggplant sauce - a sour sauce made of grilled aubergine garlic and vinegar for cocidos.
- Toyo't Kalamansi - soy sauce with kalamansi limes.
- Banana ketchup
