İşkembe

İşkembe is a kind of tripe soup prepared mainly in Turkey. The name işkembe is a Turkish word of Persian origin for belly, but also stands as the short for İşkembe çorbası. (çorba is also a Turkish word of Persian origin for soup).
The Bulgarian version of the soup is called Shkembe chorba.
The Greek version is called πατσάς, from the Turkish word paça 'tripe'. Another word for tripe in Greek is σκεμπές < işkembe.
The Romanian name is "ciorbă de burtă", having as a variant "ciorbă de ciocănele" (soup from pig legs), similar in preparation and serving.
Another different type of tripe soup common in Czech Republic is drstkova polevka (dršťková polévka). It is also well known as a hangover remedy.
