Pumpkin seed oil

Pumpkin seed oil (also known as pumpkinseed oil, pumpkinseedoil, kernöl, or kürbiskernöl) is a culinary specialty of Styria, Austria and is made by pressing the roasted seeds of pumpkins. It is also widely used and produced in eastern parts of Slovenia, namely Prekmurje and Slovenian Styria (Štajerska) region. International producers use white seeds with shells and this produces a cheaper white oil. New producers of seeds are located in China and India.
The viscous oil is dark green to dark brown in colour. Brown oil has a bitter taste. Used together with yoghurt the color turns to bright green and is sometimes referred to as "Green Gold". Pumpkinseed oil has a nutty taste and is very healthy due to its richness in polyunsaturated fatty acids.
Pumpkin seed oil is made of the skinless seeds of a special type of pumpkin, the "Styrian Oil Pumpkin" (lat. Cucurbita pepo var. styriaca, also known as var. oleifera).
The oil is an important export commodity of Styria, and is also distributed worldwide by some online shops.
