Rihaakuru

RIHAAKURU, pronounced (Ri-Haa-Kuru) is a traditional product of the Maldives. Rihaakuru, which may also be famous as the "Maldivian Fishpaste" or "Fish Broth" has been a product consumed almost daily in every household since their written history.
Rihaakuru is made through following a simple but time consuming procedure. This Maldivian paste is the result of hours of cooking of tuna in water. Once the tuna is cooked and ready to eat, the tuna will be separated from the water, leaving only the soup of the fish (Garudhiya) to be concentrated. This soup will then be cooked till it becomes a thick paste which we refer to as Rihaakuru.
This is used as an edible paste which is eaten with rice or rotti. The Maldivians use Rihaakuru as a base for curry and various other soups respectively. In some countries people use Rihaakuru as a sandwich spread. A noticeable consumption of Rihaakuru has been recorded in china, which is used in Chinese dishes including Cha Kuay Teow Mee, Fried Vegetable (Kai Lan, Chye Sim, Pak Choy) and Hue Muay. As told by a famous Rihaakuru producer in the Maldives, MIFCO “Indeed we believe that there can be many more uses for Rihaakuru and that its use is only limited by ones imagination”
