Is a higher or lower number harder on the scale?
Higher is harder. It's a hardness scale, not a softness scale.
There was an edit on the page by Talk which claimed that knives should be made of soft steel rather than hard, so that "they can be sharpened and stay sharp." Steel knives should have their cutting edges, at least, very hard, or they will dull with use. They are sharpened using abrasive materials which are harder than the hardened steel of the knives. I have never heard anyone claim otherwise. The place for any dispute about the proper construction of knives is the discussion page at Knife. Cstaffa 02:33, 21 December 2006 (UTC)
