Kartoshnik

A Kartoshnik is a Russian holiday potato cake, typically made with cheese and onions. A typical recipe may include potatos, eggs, whipping cream, cheddar cheese, swiss cheese, baking powder and sour cream. It is assembled in such a way as to rise when cooking, and then slightly settle when cooled, resembling a cake. It is then cut into squares, and served as a side dish.
