Maqluba

Arabic: مقلوبة. Is an Upside-Down Rice and Eggplant Casserole made with richly succulent braised lamb and tomatoes. When the casserole is inverted, the top is bright red from the tomatoes that cover golden eggplant.
Maqluba is one of the most popular family dishes in Palestine where it is generally made with lamb or chicken and different sorts of vegetables (tomatoes, onions, aubergines, cauliflowers....etc.).
