Yatsuhashi

Yatsuhashi (八ツ橋 or 八橋) is a Japanese kind of confectionary, a form of miyagegashi (sweet sold mainly as a souvenir) only sold in Kyoto. It's made from jōshinko (a pulver made from rice), sugar and cinnamon. Baked, it is similar to senbei. Raw yatsuhashi (Nama yatsuhashi) is often eaten wrapped around red bean paste (餡, an), and may come in a variety of different flavours.
