The default (first selection) is the white female. That's probably the best guess since the canon appearance for JC ended up being the first selection for the first game.

Admittedly I haven't played it in a long while.. but I recall there being a glass chamber with a human figure inside labelled "Alex D" in the first game?
Yes, there was. The data pad said it was Alex Denton and he had the same genetics as those from JC's tube. He was out of the tube by the time JC arrived. I think there may have been an e-mail about Alex in Walton Simon's computer in Area 51.
